Easter Lamb Cake (Lammele)

It's Easter sunday ! The most perfec time to spend with your family.. When you're not in a middle of a global pandemic. I feel like we all need some sweet in our life during those hard times, and that's why, even if you're alone for Easter, you should make this dreamy Alsacian dessert.
This cake is traditionnaly called "Lammele, or Lamala", and during the Easter season in Alsace, a french region, you can see Lammele in every store. It's a sort of sponge cake that is very light and fluffy, with a delicious hint of lemon. This recipe is very versatile, so you can add whatever you want into the plain batter, to make it fit your tastebuds! The story behind this cake is related to lent. In the 16th century, during lent, christians weren't consuming eggs, and to get rid of the ones they have leftover, bakers started to make those lamb looking sponge cakes and were gifting them for Easter.
This dessert looks like a lamb, and it's because in christianism, it represents the purity and
ressurection of the Christ. For this recipe, I used a special mold, made in clay and shaped like a lamb. In Alsace you can find them everywhere, but it's not something very common outside of this area. Nowadays, you find a lot of aluminium mold that works also just fine. You can still make the batter and then use a different mold, it will still taste very good :D.

One of the amazing things about this cake, is that it is delicious to eat plain, but that you can also play with the flavors as you wish! It pairs really well with some red berries, or even some strawberry sauce (I freeze a big batch during summer and then defrost it when i need it).
